Kausuri Methi is an ancient spice, with
a slightly bitter taste. The seeds are small, hard, yellowish-brown in color
and smooth. The fresh tender green leaves of the fenugreek plant, called
methi or menthi, have a bitter-sweet flavor, which are used as a regular
green vegetable in Indian cuisine such as dals and vegetables. These can
also be used to prepare salads. The dried form of fenugreek leaves, is known
as kausuri methi that is a popular spice used to enhance the flavor of
Indian dishes.
Kausuri Methi should be lightly dry roasted before using. The roasting
enhances the flavor of the dish and reduces the bitterness of spice. Adding
these dry roasted seeds as it is or in powdered form to a gravy or dal dish
produces a tangy and mellow characteristic curry flavor.

Cultivation Zone: Kausuri Methi is indigenous to countries on the
eastern shores of the Mediterranean and is cultivated in India, Egypt and
Africa.
