Papads Cooking

Papads can be cooked several ways.
  • Fry in oil like French fries: Papadums are cooked by deep-frying in oil, which causes them to expand and crispen.
  • Roasting over open flame: They may also be cooked by roasting them over an open flame, in a toaster oven, microwave oven, on gas or electric stove. You can roast Papads within 40-45 seconds.

Papad Making Process

Machine Made:
For making papad finely ground flour of urad dhal (phaseolus mungo ), salt, sodabocarb, asofetida, and desired seasoning is required. According to variety ground black pepper, garlic, chilli etc., are added and a hard dough is made using water. The dough is kneaded vigorously on dough machine for several minutes. Then the machine makes several smaller units of the dough & is further rolled into thin wafers and are allowed to dry. At the time of dough making refined edible oil is also added. One the papad are rolled out they are dried well. Properly dried papads have a shelf life of about 6 months.

Traditional Method(Hand Rolled)
The traditional method of making papad is more labour intensive than being a automated process. The traditional method is generally followed is as follows:

A tight dough is made out of all ingredients that include flour (urad dal, rice, etc), salt, soda bicarb, hing (asofitida), oil, water & desired seasoning. Once the dough is ready, it is wrapped with a damp cloth & kept aside for some time. Then the dough is divided into small balls and are rolled into thin wafers. These paper-thin papads are dried out in the sun.
